Is sucralose bad for you?

Short answer

Regulators in the US and EU have approved sucralose and reaffirmed that approval, and most of an ingested dose passes through unabsorbed. Three questions remain genuinely open rather than settled: what heating it above roughly 120°C produces, a 2023 finding on the impurity sucralose-6-acetate, and its effect on gut bacteria. None of that establishes harm at ordinary intakes.

What sucralose is

  • E955 on European labels, sold as Splenda in the US, around 600 times sweeter than sugar
  • Made by replacing three hydroxyl groups on a sucrose molecule with chlorine
  • Largely unabsorbed — the bulk of a dose leaves the body unchanged

The three open questions

Heat. Sucralose is stable at room temperature but degrades when baked or fried at high temperature, and some of what it produces has drawn regulatory attention. EFSA has an evaluation open on heat-degradation products rather than a conclusion, which is why guidance on cooking with it is cautious rather than absent.

Sucralose-6-acetate. A 2023 paper reported genotoxic effects from this impurity in laboratory assays. It is one study on an impurity rather than on sucralose itself, and it has not been replicated at the level that would change an approval — but it is also not nothing, and it is the reason the conversation reopened.

Gut bacteria. Most of the microbiome work is in rodents at doses well above ordinary human intake, and the human studies are small and mixed. This is an area where the honest summary is that nobody knows yet.

What the WHO said, and what it did not

In 2023 the World Health Organization advised against using non-sugar sweeteners for weight control. That guidance was explicitly a conditional recommendation based on low-certainty evidence, and it was about weight management rather than a safety warning. It is often quoted as though it were the latter.

Where sucralose sits in our score

Olive Detective does not treat sucralose as a toxin. It falls in the sweetener range that the score counts as a marker of ultra-processing, alongside the flavour enhancers — the reasoning being that a product needing an intense sweetener is usually a formulated product, and that is what the score is measuring.

So a sucralose-sweetened drink loses points for what it says about the product, not for a claimed effect on the person drinking it. That distinction is deliberate, and it is the one most articles on this question blur.

Is sucralose safer than aspartame?
They are different molecules with different open questions and both hold current approvals. Neither has evidence strong enough to rank against the other for ordinary use.
Can you bake with sucralose?
It is sold for baking, but it degrades at high temperature and the degradation products are the subject of an open EFSA evaluation. That is a reason for caution rather than a demonstrated harm.
Does sucralose break a fast?
Pure sucralose contributes no calories. Retail Splenda is bulked with maltodextrin or dextrose, which do — the sachet is mostly carbohydrate by weight.
